The vineyards are in the the Leyda Valley which is a sub region of the Antonio Valley. This region is considered to be a cool climate area. The vineyards face the very cold waters of the Pacific Ocean. Here the Humboldt Current of the Pacific Ocean makes the water so cold. With this cold water it creates cool breezes which reach to the vineyards and keeps air flowing and the temperatures down to around 75F.
Also the vines are planted in soils of granitic rock and sand with calcium carbonate and alluvial deposits.
This wine is 100% Sauvignon Blanc fermented in stainless steel.
The 2015 Boya Sauvignon Blanc from Leyda D.O. in the San Antonio Valley in Chile and Osetra caviar is a winning combination especially when the wines price point is around USD $16.
The wine is filled with grapefruit and with a little mango. You will also find some grassiness with a zing at the end. Refreshing and delicious.

O My Setra Caviar (Osetra): At first there are the flavors of the grapefruit and mango and then the palate is cleansed with a slight floralness of the grapefruit remaining. A good Lady Elena Caviar and wine pairing.
