1990 Gosset Celebris Champagne

Today we are pairing this Champagne with O My Setra Caviar (Russian Osetra Sturgeon) from Lady Elena Caviar.

The champagne is a blend of 67% Chardonnay and 33% Pinot Noir.

The champagne has a dark golden color and there are little to none tiny bubbles. There are aromas of sweet honey caramel and citrus with some mushroom. On the palate minerality pops through the caramel. There is brioche and sweet coconut with quince. The tiny bubbles appear so gently on the palate. The finish is filled with a burst of soft fruit and caramel and citrus. Other than the decrease in bubbles, the wine is standing strong.

O My Setra Caviar (Russian Osetra Sturgeon):At first the flavors of the champagne just flow over the caviar and then all is neutralized with a clean finish. A great caviar and champagne pairing.

Today we are pairing this Champagne with The 8th Pearl caviar (Kaluga Hybrid) from Lady Elena Caviar.

The champagne is a blend of 50% Chardonnay and 50% Pinot Noir.

The champagne has a golden color and is filled with non stop streaming tiny bubbles. There is a creamy yeasty caramel aroma with notes of sweet fruit and soft minerality. This flows through to the palate on another layer with lemon curd and some nuttiness. The finish is long with caramel and notes of some black fruit.

Today we are pairing this wine with Americana Caviar (White Sturgeon) from Lady Elena Caviar.

This wine is from the Wachau region of Austria and is 100% Gruner Veltliner. The name of this wine includes the term-Federspiel. This  is the second highest quality level specific to the Wachau region. The wine has a pale gold color. There are aromas of white flower, orange rind, apricot and peppery herbs. On the medium bodied palate the peppery herbs become more pronounced. The wine has a medium length mouth watering finish with the pepperiness showing thorough.

This wine is from Sancerre and is 100% Sauvignon Blanc.

The wine has a pale golden color. There are aromas of smokey flint and flowery creamy grapefruit which also shows through on the palate. The wine is full bodied with a slight waxy feel. The finish has some grapefruit pith and is mouthwatering refreshing.

Today we are pairing this wine with Americana Caviar (White Sturgeon ) and Siberian Baer Caviar (Siberian Sturgeon) from Lady Elena Caviar.

The wine is 100% Vermentino from Maremma Toscana Italy and was fermented in barrrique for 6 to 8 months. The wine has a pale gold color. There are aromas of mild creamy soft apricot and white peaches with a smokey salty mineral note. On the palate it is medium bodied with slightly soft creaminess, delicate fruits and a touch of green herbs. The finish is dry and filled with acidity that balances out the wines creaminess. Very easy to drink.

Today we are pairing this Champagne with O My Setra caviar (Osetra) from Lady Elena Caviar.

The champagne is a blend of 50% Chardonnay and 50% Pinot Noir from the 65 year plus old Les Crayons vineyard in Oeuilly of the Marne Valley. The wines are from the 1997 and 1996 vintage. The dosage level is 5.7 g/l and was disgorged in October 2006.

The champagne has a golden color withe aromas of lemon curd, honey and caramel. On the palate there is a toasty yeastiness with with soft lemony minerals.The champagne finishes dry with citrus notes.

2011 Domaine des Aubuisieres Vouvray with Elegance Caviar (Golden Osetra) from Lady Elena Caviar. The wine is 100% Chenin Blanc. Domaine  des Aubuisieresis located in the heart of Vouvray in the Loire Valley in France with vineyards planted on clayish silicious soils.

The wine has a straw gold color. There are aromas of lime, chalk, honey and oranges. The wine on the palate is soft and filled with lime and honey. The finish is slightly dry with chalk notes and then becomes mouthwatering.

My Favorite Wine from this set of wines was the 2012 L’enclos des Braves Braucol from the region of Gaillac. This wine is 80% Braucol and 20% Prunelart. The wine was fresh with juicy red berry flavors. Nicely paired with those colorful tasty vegetable fries.
