1990 Gosset Celebris Champagne

Today we are pairing this Champagne with The 8th Pearl Caviar (Kaluga Hybrid Sturgeon) from Lady Elena Caviar.

The champagne is a blend of 67% Chardonnay and 33% Pinot Noir.

The champagne has a dark golden color and there are little to none tiny bubbles. There are aromas of sweet honey caramel and citrus with some mushroom. On the palate minerality pops through the caramel. There is brioche and sweet coconut with quince. The tiny bubbles appear so gently on the palate. The finish is filled with a burst of soft fruit and caramel and citrus. Other than the decrease in bubbles, the wine is standing strong.

The 8th Pearl (Kaluga Hybrid): Honey and caramel flavors are released as the champagne glides over your tongue and finishes with slight dryness. A good caviar and champagne pairing.
